um i liked the fight between Toushiro Hitsugaya and Gin Ichimaru in Bleach...
and the fight between Cloud and Sepiroth/Kadaj in Final Fantasy VII Advent Children.

Speed Grapher. Everything from that is a fight to the death.

gaara and rock lee vs Kimimaro is my favorite fight

I like the fights in the Kenshin Ovas, quick and bloody like sword fights should be.

Naruto Shippuuden: 30 (I think) when Deidara tried to run away without his arms^^

Tifa versus Loz in Advent Children....and any epic fight from Dragonball z and Bleach....there are so many of them!!

Spike Spiegel vs Andy (the cowboy) - Cowboy Bebop (Ep. 22 - "Cowboy Funk". that was just fun)
Asuka(Unit-02) vs Eva Series - Evangelion (mmmm, bloody...)

and more that I can't even think of them at the moment

Most of Kenshin's battles in the Kyoto arc are worthwhile - though I wouldn't pick the last one vs. Shishio - Saito on the other hand...

Also, X TV - not all the battles are great, but the fact that the battles end in DEATH sometimes is pretty interesting.
