I don't think of ecchi anime any differently than all of the rest. I just enjoy anime in general. But some of the series that is considered ecchi that I've seen are:
Love Hina
Grenadier
Cutie Honey
Da Capo
Chobits
Air Gear
Great Teacher Onizuka
Yumeria
Vandread
Tenjou Tenge
Onegai Teacher
Maho Sensei Negima
Ranma 1/2

It's one of the greatest anime categories (unless you count that 70s show Three's Company) ever invented! Without it, many great comedies and love stories would've not been made! Just imagine the manga/anime world without them! Madness! Chaos! Insanity! Well, at least the feeling of something missing in the comedy arena.
I never thought of Air Gear and GTO as ecchi. I always thought of the Air Gear girls as just friends or teammates, and the GTO girls just Onizuka's students, even though both titles offer their fair amount of skin for comedy's sake.

I don't think chobits,love hina,ranma 1/2 ,onegai sensei are ecchi...
I mean there are certain perverted scenes but then when we compare them to green green for example
they are hardly ecchi..

Well, it's all according to how you use the word.
Quote:
The term ecchi is applied to anime or manga that has vague sexual content (such as skimpy clothing, partial or full nudity), but does not show sexual intercourse.
The ecchi art style is loosely comparable to pin-up girl artwork, as well as to provocative fantasy and comic book art in the United States and other countries. Typical features include:
* Clothing that outlines the shape of the breasts, nipples, and labia, suggesting tightness of clothing and arousal.
* Uniforms, costumes, or outfits (all tightly worn) that may be provocative, but are worn as everyday clothing by the character.
* Bouncing of over-size breasts.
* The common gag that is usually pulled off in anime, the "head in breasts gag" that is commonly used when a male meets a busty female and falls into her cleavage.
* Characters who are unaware of their sexuality, appear innocent and cheerful, or sly and mischievous.
* The groping of breasts (whether intentional or not.)
* Clothing that is falling off or being pulled off, notably swimsuits and "sailor"-style schoolgirl uniforms.
* Upskirt panty shots and cleavage.
* Suggestive or phallic imagery.
* Exaggerated sexual attributes, often on normal or petite figures to give a sense of contrast. Especially used in dōjinshi and fanart, where a character may appear more sexual than normal.
* The occasional bare breast(s) or bottom, but the genital area is not shown.
* Skimpy bathing suits with crotch lines showing and sides of breasts showing.
* E.N.F (Embarrassed Nude Female): A female character fully/almost nude in public showing signs of embarrassment, humiliation or acting completely normally.

Going by this definition, chobits, love hina, ranma 1/2 ,onegai sensei would be considered ecchi.

I would think that it's all fanservice related, Ecchi and Fanservice go hand in hand with each other.

When I think ecchi anime I think more like Kanokon or To Love-Ru where they often give fan service, neither of which I like. I wouldn't really consider Onegai Sensei, Vandread, Da Capo, or Chobits as ecchi anime. They have their ecchi moments, but it's not like every action can be turned into fan service. And for the most part, it's not the main focus. For me, if it's a love comedy that seems to use those ecchi situations as the main theme, then it's an ecchi anime. In my experience action oriented animes tend not to be ecchi anime (although they contain ecchi moments). Of course there are exceptions like Tenjou Tenge, Grenadier, and Ikkitousen; but I tend not to watch those anyway.
And I usually dislike (my definition of) ecchi anime. Seeing the same jokes over and over gets boring. It would usually require a damn good story to make me overlook it. The only recent one that I can remember enjoying even a little is Strike Witches, as stupid as it is. This anime is pretty clear cut ecchi. Non pants wearing lolis combined with neko-mimi and getting up (non-existent) skirt points of view for random action scenes makes it ecchi.
